Try this easy one pot recipe!
Ingredients
- 1 1/2 - 2 lb beef sirloin or good quality Halal beef cut into 1" chunks
- 1 large onion diced or sliced
- 5 medium carrots peeled & diced or sliced
- 2 1/2 cup Afghan long grain rice or Basmati rice rinsed until clear
- 1/2 cup extra virgin olive oil
- 1/2 teaspoon saffron (2 small pinches)
- 3 teaspoon smoked salt or regular salt (add more toward the end if needed)
- 1 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1 whole garlic top cut off
- 5 cups water (I use two beef bullion cubes or half beef stock)
Instructions
- Gather and prep the ingredients
- Pour 1/2 cup olive oil into your dutch oven or pot and heat on medium/high heat until it is super hot. look for a little bit of smoke to come from the pot. Carefully add beef, cumin, salt and pepper. Cook until browned about 7-10 minutes, stirring few times.
- Add onions, carrots and saffron and stir a few times over 5-7 minutes.
- Pour 5 cups of water or broth, bring it to a boil, cover and simmer on low for about 4o minutes or until meat is tender.
- Add 2 1/2 rice and 1 whole garlic and bring it to a boil. Cover and simmer on low until rice is cooked thru, about 25-30 minutes.
- Serve with warm bread and enjoy!
Tips
Use beef stock or beef bullion for best flavor.
